Orange Pancake Recipe

Wanting something a little different for pancake day? these orange pancakes are perfect…and very easy to make (which is always a good thing!)

  1. Sift flour into a bowl and form a well in the bottom
  2. Whisk the egg and egg yolk together and place into the well with a little milk
  3. Whisk the egg with some of the flour until its smoother
  4. Add some more of the milk and whisk up with the egg and rest of the flour
  5. Continue to gradually add milk until you have whisked it together and its no longer lumpy
  6. Leave for 30 minutes to rest
  7. Put one of the oranges under warm water and dry
  8. Cut into slices and place onto a heated griddle pan
  9. Turn after a couple of minutes
  10. Add sugar onto the initial side and place back down onto the heat
  11. Add Sugar to the other side and turn again, take off the heat to cool
  12. Juice 2 oranges and place the juice in a small saucepan along with the sugar and butter
  13. Heat on a medium heat to melt the sugar and butter
  14. Once melted turn to high heat and allow to simmer so it reduces by half
  15. Take off the heat and allow to cool
  16. Add the grated orange skin to the pancake batter and mix together
  17. Heat a frying pan and spray some non stick spray such as fry light
  18. Put in 2 ladles of the batter and stir around until well spread and no longer moves
  19. Cook until bubbles appear and the sides curl
  20. Flip and cook the other side
  21. Continuing cooking until both sides are the colour you want
  22. Plate up, put the sliced orange on top and then cover with the orange sauce
