It is a misconception that Beef Wellingtons are really hard to do. They can be complicated as they do require a lot of time and preperation, it is worth it though. A tasty wellington with smooth mash, roasted vegetables and red wine jus is an incredible dish.

If you are planning a dinner party or a romantic meal, this recipe is perfect. I have tried a number of wellingtons in the past but this one is by far the easiest I have attempted. As mentioned it does take some time to prepare as it needs to set in the fridge a few times, although its well worth the time and effort.

  1. Wrap the beef fillet in cling film to form a barrel shape and put in the fridge for atleast 1 hour
  2. Season the beef with salt, pepper and thyme
  3. Heat some oil in a saucepan and seal the beef, allow to cool once fully sealed
  4. Roughly chop mushrooms and then place in a blender until it is a puree texture
  5. Heat in a saucepan to remove all moisture
  6. Lay the 6 slices of parma ham, overlapping slightly
  7. Spread the mushroom over the ham
  8. Cover the beef with mustard
  9. Place the beef in the centre and then wrap the ham to fully cover the beef. Cover with cling film to form a barrel shape and place in the fridge for 30 minutes
  10. Roll out the pastry into a square shape so that it is big enough to completely cover the beef
  11. Lightly hand whisk the egg to create an egg wash and cover the pastry
  12. Place the beef in the centre of the pastry and roll it tight until the beef is fully covered
  13. Add some egg was to the edges and fold these over
  14. Wrap again in cling film and place in the fridge for 15 minutes
  15. Pre-heat overn at 200 degrees
  16. Remove wellington from the fridge and cover in egg wash
  17. With a fork lighly create a pattern in the egg wash
  18. Place in the oven and cook for 40 minutes
  19. Allow to rest for 15 minutes
  20. Remove the edges and then serve
