Quick and easy recipe for jam tarts, with a tasty basil infused pastry




  1. In a bowl sieve the flour and add the sugar and butter
  2. Mix well until it resembles breadcrumbs
  3. Add the basil and stir until fully combined
  4. Add the egg and continue to mix until it all combines, add some milk if needed
  5. Cover with clingfilm and put in the fridge for 30 minutes
  6. Preheat oven at 180 degrees
  7. After 30 minutes roll out the pastry on a floured surface until its 0.5cm thick
  8. Use circle cutters to cut out the pastry and put into muffin tins
  9. Spoon 1 heaped teaspoon of jam into each tart
  10. Put in the oven for 15-20 minutes or until golden brown
  11. Take out of the oven and leave in the muffin tray for 5 minutes
  12. Remove from the muffin tray and place on a wire rack until cooled and the jam has set.
