Its that time of year again for us to be able to enjoy the lovely taste of pancakes, this is actually the first time that I was able to create any – normally they are made for me!!
For both Rach and I when we have had pancakes growing up, orange was always there. I remember every pancake day having as many pancakes I could eat and having oranges cut into quarters, to me this is what a traditional pancake is in my house 🙂
I even remember the days after going to school and everyone asking how many pancakes we all had, to see who could manage the most. I always intended to eat as many as possible but usually struggled after 3 haha! Because I love orange pancakes, I felt this recipe would be perfect and believe me it tasted amazing.
Get yourself a bowl and sift the flour into it, once it’s all been sifted you want to form a little well in the middle. Combine the egg and egg yolk add this into the well with a little of the water and whisk with a little of the flour.
Slowly whisk in half of the milk and also slowly add some of the flour, this will form a smooth batter. Next you want to stir in the rest of the milk and let it rest for 30 minutes. Whilst you are letting the batter mixture rest you can get on with the grilled oranges and the orange sauce. Get one of your oranges, wash it in warm water and cut in into slices.
You then want to get a grill pan, heat it on a medium heat. Add the orange slices on for a couple of minutes and flip onto the other side. Sprinkle some sugar on the orange and then place downwards onto the pan to brown, add sugar to the other side and repeat. Once cooked leave to one side to cool whilst you work on the sauce.
Juice 2 large oranges and add the juice to a saucepan, I only did a small amount of sauce. If you want more then you need to juice more oranges. Add 3 tablespoons sugar, and around 15g butter and put onto a medium heat. Continue stirring until all the sugar and butter has fully melted, once it has turn up the heat until it starts to simmer.
Allow to reduce by half and then take off the heat, make sure you continue to stir to make sure it doesn’t burn. You may also want to taste to ensure its to the sweetness that you want. Allow this to cool, I placed the sauce into a bowl and then placed this into another bowl of cold water. Once the 30 minutes are up I added the grated orange peel and gave it a little stir.
Now it’s time to make the pancakes!! Heat up a frying pan and use a non stick spray, I used fry light which is a better option to oil as it is lower calorie. Pour 2 large ladles worth of batter into pan and continue to swirl the saucepan around to move the liquid around the bottom, continue with this until you are unable to move any more.
Continue to cooking until its formed bubbles on the surface and the sides have began to curl, this is a good indication that you can flip it. Move the saucepan around a little bit and it should be loose, give it a flip and cook on the other side.
If its not brown enough then simply cook on this side for some time and then flip it again until you are happy with both sides. Don’t worry if you couldn’t flip it, keep trying and you will get the nack of it (plus you will have lots of yummy pancakes to eat!!)
Spray some more non stick spray to the pan to make another one..and another one…another one…why not do another one!! 🙂 To serve you can either eat the pancakes whole or roll them up, I like to roll them and place the grilled oranges on top and then pour the yummy orange sauce over the top.
You could also add some nice vanilla ice cream to give it that little bit of extra.
