Cranberry & Walnut Cake Recipe

Cranberry & Walnut Cake - Easy cake recipe with cranberries and walnut. This is very easy to make and is very tasty ;)

I enjoy baking and haven’t done any for some time, I came home from work one day and fancied baking a cake. I looked in the cupboards to see what we had and spotted a bag of cranberries and walnuts, I therefore settled on a loaf cake.

Once I had weighed out all of the ingredients I placed the flour, sugar, baking powder and the bicarbonate of soda into a ball. I mixed these together and then combined this with the cranberries and walnuts. I mixed these enough so that all of them were well covered with flour.

I then put 200 ml of tropical juice into a bowl, I thought tropical juice would make a nice addition to the cranberries. With the juice I mixed the egg, once all mixed together I poured this into the bowl with the flour. Once everything is mixed together I poured this into a loaf tin that had been greased to ensure the cake doesn’t stick when cooked.

The cake went into a preheated oven and left it to cook for roughly 50 minutes, its important to make sure the middle is fully cooked so putting a skewer in and checking that it comes out clear is the best way to check.

When it is cooked take it out and allow it to cool in the tin for 15 minutes or so, once cooled place on a wire rack to let it cool fully. I was originally going to leave it as this but wanted to add a little extra so made some icing based on the pack instructions.

I placed this over the top and then sprinkled some cranberries over the top. Slice and serve to friends and family, believe me they will enjoy it! Let me know what you think of it in the comments below 🙂

Walnut cakes are really nice but having the cranberries gives them a little extra sweetness. The cake itself is nice and light

Servings: 8 People
  • 250 g Flour
  • 150 g Caster Sugar
  • 2 tsp baking powder
  • teaspoon ½bicarbonate of soda
  • 200 g Dried Cranberries
  • 100 g Walnuts chopped
  • 1 Egg
  • 200 ml Tropical Juice
  • Icing Sugar
  • Water
  • Spare cranberries for decoration
  1. Pre-heat your oven at 180C
  2. Grease a loaf tin that’s 9x5 inches
  3. In a bowl place flour, sugar, baking powder and bicarbonate of soda
  4. Mix this together and mix in the cranberries and walnuts
  5. In another bowl you want to add the egg and tropical juice together
  6. Once mixed together pour this onto the flour mixture and stir until its all blended together
  7. Pour mixture into the loaf tin
  8. Bake in the oven until skewer comes out clean
  9. Allow to cool in the tin for 15 minutes and then place on a wire rack to cool further.
  10. Once cooled mix the icing sugar and put this onto the top
  11. Sprinkle the remaining dried cranberries on the top

Carrot Cake Recipe

I finished work and was in the mood to bake something, id wanted to try a carrot cake for some time so thought why not! I found the original recipe here. I did add a few more walnuts and left out the ginger.
Course: Dessert
Servings: 8 -10
  • 250 ml sunflower oil
  • 225 g light muscovado sugar
  • 300 g self-raising flour
  • 200 g grated carrots
  • 4 large eggs
  • 2 tsp baking powder
  • 1 tsp mixed spice
  • 50 g unsalted butter
  • 25 g Icing Sugar
  • 250 g Full Fat Cheese
  1. Put oven on to 180/160 fan which is gas mark 4
  2. Grease x2 20 cm round deep cake tins with butter
  3. Place oil, eggs and brown sugar into a large mixing bowl and blend until fully mixed together, lighter and a little thicker in consistency
  4. Fold in the grated carrots
  5. Once folded stir in flour, baking powder, mixed spice and walnuts until well blended.
  6. Place half the mixture into one cake tin and the remaining half into the other
  7. Put into the oven and bake for around 35 minutes or until brown. Put a fork through the centre, if it comes out clear its ready.
  8. Place on a wrack to cool
  9. Place butter, icing sugar and cheese into a bowl and whisk until mixed and smooth
  10. Spread half the cream on the top of one of the cakes and place the other cake on top
  11. Pour remaining cream on the top and decorate with remaining Walnuts

What Did The Carrot Cake Taste Like?

The cake was very nice, I have not had that many carrot cakes to be able to compare it to but the feed back I have gotten from others was that it was tasty. The cake itself was very light, which to me makes me less guilty when eating it! Next time I think I would prefer to have cut the walnuts for on the top and sprinkled on instead of placing whole walnuts on it.
